Yeah, Copenhagen (specifically, Noma) was the place he went to after working at Ever under Chef Terry. And we know it was before NYC, because on the Christmas episode, everybody keeps asking him about Copenhagen, which seems to indicate that's where he was right before then. His cousin Michelle asked him if he wanted to come stay with her in NYC, so you know his NYC life all took place after that Christmas, and that he was there all the way up until Mikey's death. When Chef Terry asked him at one point where he had experience before coming to Ever, he said The French Laundry and a family restaurant (obviously referring to The Beef), where he didn't actually cook, he just hung out. That's when she asked him if he had ever been to Copenhagen and he said he hadn't. I have no idea how much time each of these various periods in his life lasted when he was moving around, but I'm guessing he was probably in New York City for about 4 years, started working at Daniel under Chef Boulud when he first got there and at some point took a job as the CDC at Eleven Madison Park (evil Joel McHale executive chef restaurant).

yeah i always listen to stuff quite loud haha especially immersive shows like the bear so i notice a lot more in these shows with a lot of silence and quiter scenes. i assumed it was their microphone but still slightly frustrating, my only complaint with roshis content haha, a trivial issue though.

Yeah I have to turn it up all the way with headphones to notice it, but it's there. Probably a combination of their mic setup and background noise, like an AC unit.

I think this is Carm's timeline... The French Laundry (a real place) in California, then Ever in Chicago (also, a real place), then Noma in Copenhagen (yup, real place), then the insane family Christmas dinner, then Daniel in NYC being mentored by well-known French chef Daniel Boulud (a real person whose restaurant Daniel is a real place), and finally Eleven Madison Park in NYC (rhymes with seal mace), where the dickhead executive chef worked. Mikey's suicide occurred while Carm was at Eleven Madison Park, so that's the last place he worked before moving back to Chicago and taking over The Beef. Anyway, all of the real restaurants Carm worked at are Michelin-starred in the real world... he wasn't lying when he said that he succeeded at his dream of working at the best restaurants in the world.

I don’t know if people remember, but Sydney had mentioned in one of the earlier episodes that she had gone to New York once and had the best thing she ever tasted at a restaurant that was made by Carmy. Pretty much everything in Carmy’s life is predicated on trauma

Actually, the thing I “liked” was that in this episode you can see Chef Terry also used micro aggressions on Carmy. She was nowhere near the level Chef David was to Carmy, but her comments to Carmy were put downs meant to push him harder. Everything Carmy said to Luca was just him parroting what Chef Terry said to him, just Carmy can’t help but yell and let it get out of control. However, my main point is that despite everything, Chef Terry still carries the “stick” method of training her young chefs. Chef culture man…

The whole episode is a combination of flashbacks from different times in his life (plus the present when he's alone at The Bear in the middle of the night), and they aren't shown in chronological order. It keeps bouncing back and forth between the various stages of his life in various places as he became an excellent chef, all culminating with Mikey's suicide and him returning to Chicago to run The Beef, which was considerably less prestigious than all the places he worked before.

34:30 Oh shoot! Carmy subbed out the fennel sauce for the blood orange reduction because the customer had a fennel allergy!!! (Fennel sauce is bomb by the way, I love it). Then we find out that Sydney was the one with the Fennel allergy and it was the best meal she ate (what looks like Hamachi, potato chip, and blood orange reduction). Nice storytelling without much talking! It also probably ended up better than the Fennel meal, which was Fu*k You chef's recipe.

Carmy's timeline goes French Laundry (California), Ever (Chicago), Noma (Copenhagen), Daniel (NYC), and Eleven Madison Park (NYC). He was in NYC under the a-hole chef when he got the call from Natalie that Mikey had committed suicide. I'm pretty sure last season's Fishes (chaos episode) took place right after Carmy returned from Copenhagen. I think he took up his cousin Michelle's offer to stay with her in NYC shortly after the nightmare Christmas. He was mentored by the gentle older French chef at Daniel as his first job there. Side note - the French chef was Daniel Boulud, the real owner and namesake of the restaurant Daniel (2 Michelin stars). He's a pretty famous French chef. I think Carmy next went to Eleven Madison Park after his time learning under Chef Boulud, and that's where he worked under the piece of shit chef - that was his last job before returning to Chicago after Mikey's death.

I like that they used that conversation with Chef Terry (the nice head chef from Ever), to establish the timeline. The F-you chef was Carmy's first head chef when Carmy was perfect, but more timid. Carmy moving to Ever after showed that the F-you chef put a demon in Carmy, as in a power up. That's why they constantly show Carmy picking on Luca, the Will Poulter chef, and most of Ever that they were all "too slow" and every second counts, because Carmy was splitting peas and juicing oranges at literally 4x speed (which is why they showed the pea buckets side by side). Chef Terry wasn't having it because she prefers a non toxic environment, which we saw in the Richie episode in Season 2. The F-you chef actually powered up Carmy with demon power 😈, but took away some of his humanity, whereas Carmy would have ended up closer to powered up wholesome Richie if Carmy was interning at Ever first. But I understand why he would work at French Laundry first, because in real life it's one of the most famous restaurants in the world that I even know of (I ain't paying $175 for a 2 inch fish with a potato chip on top. Give me a fine dining Japanese $200 omikase meal where they at least spam you with a ton of fine dining Japanese food in bulk). In a way, it's almost like Carmy is on Sasuke time while Richie is Naruto. Or Carmy is Darth Vader, Terry is Obi Wan, and Richie is Luke.

I'm glad the show kinda harped more on Chef David. I honestly thought a lot of the memories and dreams might have been embelished from Carmy's perspective, like he was essentially thinking his own criticisms through David's voice, but nope. Dude was straight torturous to him. And I also like that the series kinda treats beauty as a neutral. It isn't inherently "good" given that Carmy used beauty and perfection and excellence all as escapes from heathily processing things, and now he's doing it again. In David's kitchen, beauty comes at the cost of sanity and dignity. In Terry's it requires some stern guidance but mostly care for the chef and the food equaly

love that y'all liked the episode!! it's def one i keep thinking about over and over. i love how carmy choosing to plate his own dish instead of his asshole chef's and that ending up in front of sydney parallels another moment - sydney choosing to trust her instinct on her cola ribs/risotto dish and giving it to the food critic at the beef. the show is full of crazy callbacks and echoes that are so so well-done - can't wait to see your thoughts on the rest of the season!

I do like that with showing Claire it highlighted the difference in emotional maturity between her and Carmy. You can definitely say her job is more stressful since people can die in her situation but she knows how to leave her shit at work and not let it take over her personal life. Which is crazy hard considering the hours she does as a medical intern which they highlighted by her waking up at 4am. It's a good way to show why Carmy needed a partner like Claire that understood the stress he was going through and wasn't pushing him for stuff they both knew they couldn't have time for. Which is why I'm not a big shipper at all for Carmy and Syd because the power Dynamic that they have at work would not translate into a healthy relationship at all lol
