If you look back when she gets her head bit off, they show her hair piece just shatter indicating that her soul gem is gone, hence why she died. The writers of this series were asked once in an interview if Mami would have survived if her soul gem was on another part of her body and they said that her head would just grown back as long as her gem was in tact.
