If you are looking for quintessential Australian movies, the first thing that comes to mind is "Priscilla: Queen of the Desert".
A couple of other great movies that are distinctly Australian would be "Gallipoli" (a WWI movie) and "Rabbit-Proof Fence" (which is about the Stolen Generation).
You could also check out any Baz Lurhmann you haven't seen ("Romeo + Juliet" is the only one I see on your FAQ), though only two of his movies are actually set in Australia ("Strictly Ballroom" and, perhaps unsurprisingly, "Australia").

Paul Hogan and Linda Koslowski did another film in 1990 called “Almost An Angel”. It’s a good movie. I think it’s a good one to watch around the Christmas holiday season.
