I think it's safe to say that Howard has come to terms with his role in the death of Chuck. He spent season 4 working past his grief while Jimmy did not. He wanted Jimmy to work with HHM because he's finally free of the burden of Chuck, both legally and emotionally.

Whenever we see two characters together and the number 3 is prominent, it's symbolizing that Chuck is still looming over their interactions.

Here's the issue: Howard is offering Jimmy everything he always wanted and still wants. But Jimmy can't accept the offer because he's too deep in cartel world. So, if Jimmy can't have what Howard is offering, Jimmy is lashing out.

In the very first episode, if you look at one of the scenes carefully, you can see that Kim is literally cleaning up messes that Jimmy made. This episode she is literally cleaning up that she made that Jimmy helped create. What will she have to clean next???

The thing with Kim and Acker is that Acker exactly called her out on what she’s doing. Instead of giving to charity every month, or going to soup kitchens, she’s doing her pro Bono cases, to clean her conscience, or make up for the good she’s done. And if you look at past seasons, whenever she’s provoked personally, she acts out. Howard not letting her go to lunch, ADA Ericsen talking about Jimmy being a scum bag lawyer in the Huell case, and now Acker.

Gus didn't need a witness, it was about control. Even if the man was caught and gave up Gus (which wouldn't happen, it's already been established that Gus's men were well paid to stand up to any heat in BrBa) having a manager say that Gus was at the restaurant would be meaningless. He doesn't even ask Lyle to stay late, he was almost out the door when he decided to go back to cover the fryer. So that wasn't part of some plan of Gus.

Important detail is that Jimmy buying the bowling balls is after his meeting with Howard. If you look he's wearing the dark blue shirt that he has on when he meets with Acker. He wears a much lighter blue shirt when he meets with Howard for lunch. So he either bought the bowling balls before or after his meeting with Acker and then went to Howard's place. I think you're right about the three bells symbolizing something, which I would say would be Chuck hanging over Jimmy and Howard's conversation. But Howard not only has this new spiritual license plate on his car, during their lunch he also orders a steamed sole with no butter, so Howard's "soul" is clean in this scene. We know that in last season he was actually seeing a therapist and working through his shit, unlike Jimmy who decided to suppress everything. Now Howard comes to him with the job that he initially wanted but all of that's tainted at this point and there's a lot of resentment over the fact that now this is being dropped on his lap since it's convenient for Howard. Both of them have been changed by Chuck's death, one for the better and one for the worse.

Gus wanted to have a witness that's why he kept the manager.

A thought popped into my head that Jimmy is kind of like the tamest version of Joker

Namaste is a Hindu greeting, 'Nam ass tay' I guess its implying that Howard is going through a bit of a spiritual or self reflective streak, or it could be perceived with kind of a pretentious hipster new age element to it. Regarding why Jimmy did what he did? Very weird reaction indeed. I guess you've got to get into Jimmy's head when it comes to his history with Howard and HHM
