I mean, it can be done. Some idols who can play instruments get to play, especially if it's a change-up. ENHYPEN's Jay and Heeseung. Jay played his guitar during the Weverse concert for their song Attention, and recently, on their tour, he played it for TWF, and Heeseung plays the piano for "Just a Little Bit." Youngjae has played the piano for a GOT7 performance for the song "You Are."
