I'm cooking today, here's a great recipe I wanted to share

Ingredients:

1 cup soy milk (or any vegan milk)

2 teaspoons apple cider vinegar or lemon juice

1 cup all-purpose flour

1 tablespoon baking powder

½ teaspoon sea salt

1 tablespoon granulated sugar (or maple syrup or agave)

1 tablespoon vegan butter or oil (plus extra for cooking)

Instructions:

In a small bowl, mix the soy milk and apple cider vinegar (or lemon juice). Set aside for about 5 minutes to create a vegan buttermilk.

In a large bowl, sift together the flour, baking powder, and salt. This sifting helps make the pancakes fluffy.

Add the sugar, melted vegan butter/oil, and the buttermilk mixture to the dry ingredients. Using a spatula, gently mix the batter until just combined. It's okay to have some lumps.

Heat a griddle pan or cast iron skillet over medium heat. Brush with a little coconut oil or vegan butter.

Pour about ¼ cup of batter into the pan for each pancake. Wait until bubbles form on the surface (about 2-3 minutes), then flip. Cook for another 2-3 minutes until golden brown.

Repeat with the remaining batter.

Serve hot with maple syrup and your favorite toppings.
