If you do ever try hot pot again, you could potentially try to find a restaurant that does individual hot pots for 1 person🤔 like you pick the broth you want, and then you can pick the meat, veggies, and sides you wanna eat. Those will go into the broth to cook (meat takes short time, sometimes just a few secs. Veggies and etc will obviously take longer) and then you can also get a side sauce or two! I suggest either the peanut sauce with some soy sauce or vinegar (some people like to put cilantro in it, I don't lol), and then my favorite sauce to make is soy sauce, some vinegar, and then some chili oil! Then you can dip your meat, veggies, noddles, etc in the sauce and etc! (You can drink the broth, my parents have done that before, but I think people usually just use the broth to cook the food obviously)
