RWBY focuses on the four main girls (each named after a colour in various languages), and how they go from bright eyed hopeful girls to facing the darker tones of the world. Vol 4 op conveys this theme (paraphrasing: it used to be a fairy tale but turns out life is a tragedy). Plot usually takes a backseat to characters and action, but isnt bad by any means. Things start taking a turn when some people start dying, and we see the toll it takes on Ruby (the MC). It gets even more rough when racism, ideological differences and trauma gets explored with various characters. The main four are not immune either. Overall it's kinda dark but hopeful. It's very my speed so I really enjoy it, with Yang & Blake being my favourites.

One other thing that's kind of interesting, is that most (possibly all, actually) the named characters in RWBY are references to characters from various fairy tales/myths/legends. This isn't really plot-relevant, but it can be fun to try and spot personality traits etc and try to guess where inspiration comes from. Some characters are a combination of several.

A quick rundown on plot points without spoilers-- Story follows four main characters, the recurring girls in red/white/black/yellow, with the girl in red being the primary protagonist of the four. Black and white demon-looking creatures be always bad. Everyone else falls into various teams/factions, some good some bad some somewhere in between. Lots of moving parts in the world of RWBY. The OPs are pretty chaotic, and heavily figurative, so they not always easy to glean plot from, hehe! π
The first three seasons were built in an older, clunkier animation platform (I'm not an animator, so I don't recall the name of it), they switched it up to a different platform from season 4 and onward, as you noticed. Budget was basically nothing at the beginning, but they got more as things went along so the animation went from very janky at the beginning to what it is now. Fight choreography has always been amazing; Monty Oum was an accomplished martial artist and dancer (aside from being a creative genius), and this entire series is his brainchild. Unfortunately he passed away unexpectedly after season 3 leaving the team at Rooster Teeth (the parent studio) to continue the work based on notes and plot points he'd sketched out previously, is my understanding. So some of the writing arguably gets a bit less consistent after season 3 as one might expect given the loss of the primary creator, but isn't necessarily worse overall. There were a number of rather silly plot points that I doubt would have made it through under Monty's watch, but many or most of my favorite arcs and scenes took place post-Monty so credit where it's due. It's a great show, and very memorable.
Music is one of the high points of the series. The songs are written by Jeff Williams and the main female singer is his daughter, Casey Lee Williams. Both are superb, some reaction channels will do entire reactions just on the RWBY music. Casey was in her teens for most of the early songs, like 14 or something for the earliest, which is crazy. She has some serious pipes.
One neat thing about RWBY, Rooster Teeth is very friendly towards reactors and it's common for reactors to post completely unedited reactions with the full show footage on YouTube (the series is actually viewable for free on YouTube as well). Occasionally algorithms issue strikes on it, but my understanding is if you just bring it to Rooster Teeth's attention, they do whatever they do to make it not an issue (I know nothing about how YouTube actually works, lol, I'm just a consumer).

RWBY is the product of Monty Oum. and that alone is worth a watch. The creator of RWBY had such a genius mind for fight choreography. You can see it in his early work Which is linked below. If you do start RWBY it would nice to see you react to the video posted below before you start.
