Although "things aren't going so well" for the Starks, they are easily one of the most important families in the GOT world, Especially after Robb's rebellion, they represent a degree of influence that can threaten the Lannister's (for example). Any Stark member is of huge interest, and for those who think Bran and Rickon are dead - Sansa is technically next in line as heir. Besides all that, Sansa is so important as to be of considerable value for Littlefinger.

The army of the undead are just the numbers, they create them from raising people back from the dead. The white walkers are the more scary looking ones, like the one Sam killed, they are more intelligent as well. They have the power to create more undead and I think the king of the white walkers is the only one with the ability to create more white walkers. So the baby became a White Walker which for them is much more valuable than the undead. If anyone can/wants to explain it better, please do haha
