I’ve heard they used a lot of pink in the series just because one of the guys in charge happened to like pink.

Maybe someday. I do know pretty much most of what happened so no plot point would be a major surprise.

The first two seasons like most series aren't the best and if you'd only stuck with DS9 through the 3rd and 4th season onward you'd learn why DS9 is considered one of if not the greatest Trek series in all cannon. Perhaps as they go through it you'll rewatch or start where you ended and may end up with a different take on the show. Just like here TNG especially had a very rough 1st season at least before it took off in it's 3rd season.

I haven't seen most of TAS and I don't own them, but eventually I will buy the set. The only full episode of TAS I have ever seen is "More Tribbles, More Troubles" which features the return of Cyrano Jones and the original voice actor Stanley Adams. I only saw this one because it's a bonus feature on my Blu-ray set of TOS. "The Trouble With Tribbles" has a disc by itself and also includes the DS9 sequel "Trials and Tribble-ations" which would be a real treat for you but you'll need to learn all the other DS9 characters first, which shouldn't be an issue if you keep going in release order. I watched DS9 for pretty much the first two seasons but lost interest. I own the full series Blu-rays of TOS and TNG plus all the movies except the reboots (which for me do not exist), but I haven't checked out any of the other series, other than one time I watched Voyager. It was just my luck that the one episode of that I've ever seen is widely considered to the the absolute worst one. Never mind the premise.

Mark Leonard did indeed return and voiced the role of Sarek and you're right that Majel Barrett Roddenberry (Nurse Chapel) did most female voices and was the voice of Amanda Spock's Mother in this episode. You may start to notice only certain colours will be used, lots of purple I believe this was to save money where they could. Regarding Star Trek Continues it isn't a cheap fill in the blanks type series as there are many knockoffs out there. Not only did they have a near perfect Enterprise set but also had original actors from TOS do follow-up episodes such as the actor who played Apollo in the TOS episode Who Mourns for Adonis but also brought in actors for new roles who were famous for other roles such as Lou Feriggno who was the green Hulk monster in the 1970s TV series The Incredible Hulk. Some of the episodes drag and don't seem that interesting but it ends just prior to where Star Trek The Motion Picture begins with Kirk wearing the same uniform first seen in the movie. That uniform is a favourite design (his uniform only though people generally don't like everyone else's) that it has been reused and reimagined in more recent Trek series and Kelvin movies.
