Uma has a lot of time compression. And yes, Season 2 (early 90s) was historically before Season 1 (late 90s), but canonically set after in-universe. McQueen is Goldship's grandfather on his mother's side, to give you an idea of the time compression.

Some statistics for 3 year and above horses from the JRA (organization managing Japanese national races):
In 2024 there were 8239 individual horses who participated in 2686 races. Of all those races, 115 were graded (G1, G2 and G3).
To participate in a graded race, a trainer must first make a declaration and pay a fee (per race). For a regular G1 race for 3+ year olds, the fee is 300,000 JPY. Classic races like the Satsuki Sho or Japanese Derby have 3 rounds of declarations with increasing fees for each round. If the number of nominated horses is higher than the max starters of a race, they will be selected based on merit. Each race describes how it evaluates merit, e.g. top 3 in a specific race or total price earnings.

There are a total of 25 international G1 races in Japan (technically 24 because 1 of them is a regional G1 which is separate from the national level). The game includes a few domestic G1s or Jpn1 races which are technically different but brings the games count up to 30.
Theres a total of 38 G2 races, and a total of 68 G3 races.
Now, its easy to look at 25 and think "why don't they just run in all of them?" - the reality is that a G1 is the top of the top so you have to go all out and that puts a lot of strain on the horse so doing ALL of them is basically just asking for over-exertion which can lead to early burnout or injury.
Also, obviously as you've learned with the Triple Crown/Tiara races, some races are age and/or gender limited such as the Hanshin Juvenile Fillies being limited to only 2YO fillies, the triple crown being limited to 3YO of both, and the Triple Tiara being limited to 3YO fillies only.
Then theres distance - not all horses are adept at different distances. A horse may do well in the 1800m G1 Mile Championship if they specialize in mile lengths, but may do absolutely abysmally in long races like the 3200m Tenno Sho Spring.
Finally theres prestige - while on paper and in theory a G1 is a G1 is a G1, the actual history, prestige and purse of some races are considerably higher and why "waste time" on a less important race is often the mentality of the owners and trainers.

When Chevals sister Verxina says that they're alike because of their issue with winning, thats a nod to Verxinas real career where she was actually an incredible filly in her own right, but she was unfortunately born in the same generation as our recently late great regal lady, Gentildonna, an absolutely monster on the track who is often considered to be one of the greatest mares in world history.
Verxina and Gentildonna raced eachother 7 times during their careers; Gentildonna won 6 of those, neither won the 7th race which was the 2014 Takarazuka Kinen which was won by Gold Ship.
Most notable of their rivalry was during their classic year when both were vying for the Triple Tiara (the filly equivalent of the Triple Crown) - obviously Gentildonna famously won, but Verxina placed 2nd in all three of the tiara races. In a season without Gentildonna, Verxina may well have been a Triple Tiara instead.
