The reason why One Piece can last very long is because Oda has mapped out the main points of the story. He already has the ending down so it's just a matter of drawing it. A few years ago they released photos of notebooks he wrote years ago about future arcs. He's different from many authors who don't really have a complete story in their head when they start drawing so the story can sometimes go anywhere. One Piece was originally planned to run 5 years but we're 28 years in and it looks like here are quite a few years more.
