And that is the canon version of Grievous, the old version could fight in equal terms with any jedi (the most powerful like Obi Wan, Windu, and the like are the exception), since Jedi need to be calm and composed to use the force, Grievous was fast, skilled and tricky enough to put fear and stress in the minds of the Jedi, besides he was trained by Dooku, one of the best duelists in this era, so even if he didn't have the force Grievous had his badass ways to compensate. That is why it is a disappointment to me that the canon version puts him as just a clever coward with lethal weapons and an army.

Grievous is considered very dangerous in the show because that's how everyone else including the Jedi treat him. They see him as a huge threat. The problem is that we rarely get to see that. It's just few lines here and there "He won a massive battle in this sector." Although I think that's mostly because of the droid army he leads. I have hard time believing he could fight 1v1 against an experienced Jedi like Jedi Master or council member. Kit Fisto owning him makes perfect sense to me. Just the fact that he doesn't have the force puts him at a massive disadvantage. His droids are his true power. And even though he is a coward, it's also very smart to run away when you can't win.

I remember that George didn't write anything related to this show, Dave was the one making the stories, so George only made a villain with one single weakness, his coughing. So I blame Dave for this one.

Didn't George always intend him to be a moustache- twirling coward? I mean its cool, my head canon has always been that Grievous is totally competent offscreen and we just see his bad days ( not counting Dathomir)

Grievous is probably my biggest disappointment of the canon continuity in the prequels. He was supposed to be scary, dangerous and a threat to everyone, not just in close combat but also as a militar commander.

It was Sir Alec Guinness that coined the name "Lightsaber." To George they were always "Laser Swords."
