I'm really having fun painting with gouache lately. It's weird because gouache always have been the most hated paint by me. We used it in our classes in uni a lot and I hated everything this paint does: the colors getting lighter after drying out, so it's hard to mix the same color to correct mistakes, for example, the paint making everything dirty after drying, like, you touch a color - everything it now this color. And so on and so forth. And even not talking about colors in my study palette being super muted.
It's fascinating how you can change your mind completely by just using better material. I got this poster colors (basically the same gouache) from Shinhan a few years ago, an art supplies store I was collaborating with sent it to me even tho it wasn't that profitable for them, no one was interested in gouache that time. And I also asked friend to send me this set over after I moved countries (and the box it HEAVY) and I have no regrets. I enjoy it so much, the colors are just... candies! And it's stiff alive even tho I got the set a few years ago and didn't use it that much honestly... I just added some water, stirred and it works!
I'm not promoting it, just sharing the enjoyment, i guess.. Maybe it will help you to try something you didn't like before and change your mind!

Ah, and I'm also rewatching Revolutionary girl Utena lately and I love it so much - the characters, the style, the details, the metaphors... I have some questions tho (like wth is Himemiya doing with her brother every weekend) but okay... it's super stylish!
