The Next Generation is widely considered the best of the Star Trek shows, but needs to find it's footing. It gets better from series 3 or 4. However, like RavenLord said, The Original Series is the backbone of it all and a few of the most iconic characters come from there (Kirk, Spock, Scotty). And it's only 3 seasons.
I personally haven't watched a lot of TOS, but most of TNG, all of Voyager and Enterprise. As well as most of the movies. Never got into Deep Space Nine, but I know it has lots of fans. I started Discovery and Picard but got sidetracked and haven't finished them yet and the newest of the live action shows Strange New World is still on my list of shows to watch, as well as the animated show Prodigy.
So, I would for sure be up to visit that universerse with you.

I think you would have fun watching Star Trek, both the TV shows and movies. It has a broad and dedicated community which reactors have ignored till recently. "Target Audience", also here on Patreon, has built quite the following mainly with their strict release-date order watch-through of the franchise.
I would enjoy seeing you experience the evolution of the series from its cheezy '60s origin, through the '80s / '90s revivals, to its current 21st-century incarnations. The shows are clearly products of their times. It would be a chance to hear you reflect on the changes to our society as betrayed by each show and movie's messaging. It would be a long commitment if you choose to make it so, but you could just watch the first season of ST: The Original Series and see what growth it brings to your channel. It will certainly attract a whole new segment of viewers and maybe encourage you to explore more science-fantasy and science-fiction, which would please me immensely.
The Time Machine (1960) is a classic and a must-watch. You and your girlfriend should react to it together. Keep up the great work. I always look forward to watching your new content. Cheers!

If you're going to react to a Star Trek TV show, just do Next Generation. It's the best ST series. Also the original Time Machine is a must watch.

I loved watching TNG, I have never tried TOS.
What you could also do is watch the Star Trek movies from 1-6 en then TNG.
Once you finished watching that, Star Trek Movies 7-10.
And if you have enjoyed that, Star Trek Voyager was also awesome.
Star Trek Deep Space Nine, Enterprise, Discovery, Picard are ok.
Star Trek Strange New Worlds I like as well.

I've never watched the original series of Star Trek but I was a huge fan of Next Generation and it's so much fun with a great cast. But it is a big commitment (it's 7 seasons). But in this episode they were referring to the more recent movie franchise starring Chris Pine and Zachary Quinto and Zoe Saldana - those movies would be fun to react to I think!
All the Physics Bowl stuff went over my head but I could answer most of Penny's trivia questions so that was a great point you made about specialized knowledge bases!

You do have a point, LOL; it would take him several YEARS and still not be done, as many series and movies there are in existence. I think the original series would be fun, but it could indeed draw him into the neverending Star Trek universe.

Captain Kirk was played by William Shatner. That series is now known as Star Trek: The Original Series. I believe it is available for streaming on Amazon, and possibly Paramount+.....I just checked, and yes, not only is the original series on Paramount+, pretty much ALL the Star Trek series are available there.
Personally, I would start with the original series, because it is the backbone, the OG, of the entire franchise. And now I have to confess, I've never seen it beyond the pilot. I'm not a Trekkie, but I have seen the original pilot and several of the movies. My best friend is a Trekkie, so I understand a lot of Star Trek references, weirdly enough. If you started reacting to this, I would definitely watch along with you, also seeing it for the first time.
I don't know of any other reactor who has done or is doing Star Trek: The Original Series.
