To clear your confusion with why Katakuri's Mochi looked weird , Simply, it was clad in Armanent haki thats why it was black. To make it easier for you to understand think like this , his entire body is mochi looks like logia but is not logia , he is classified as a special paramecia type. He can extend his limbs with mochi thats why he had a long leg there.
