I think in the scene with Nymeria and Arya, when Arya says "Thats not you", its a callback to her conversation with Ned when he was telling her she would marry a lord and her sons would be knights, but Arya responded by saying: "No. Thats not me." Arya recognizes that same willfulness and desire to not conform in Nymeria, now that they've both grown up. Nymeria appears to be doing well and leading a pack of wolves herself, and Arya respects that, like how she has fought to be respected by others as well when they question her desire to be a fighter and not a lady like Sansa.

I love everything about the opening scene. Daenerys sees right through Varys. Where a lesser monarch would have either assumed his loyalty - because the monarch *deserves* loyalty in their eyes - or assumed his betrayal - because they see betrayal everywhere, Daenerys sees that he is useful but not loyal to her. She questions him. And when he admits as much and explains his true motives, she knows that he's exactly the kind of man she needs. These are all such strong characters.
