"Uncle Tom" isn't that dated. Derived from "Uncle Tom's Cabin" (1852), the best-selling book of its time, it's used to accuse someone of being too accommodating to their oppressor, and was particularly invoked during the Civil Rights struggles of the 1950s and 1960s in America. (Supporters of Malcolm X would accuse Martin Luther King and non-violent advocates of being Uncle Toms, for example.) It's the next-"best" thing to being an Oreo, I suppose.
Spike thinks that being friendly with the Slayer means that Angel is selling out vampire-kind. Pure and simple.
