You've mentioned having an interest in seeing episodes following other characters, like Greg while Steven is kidnapped and the like. There's actually an explicitly stated reason we don't really get eps like that. I can't remember exactly who said it, possibly Rebecca, but the crew talked about how this show is exclusively from Steven's POV. That seems kind of obvious, but it was a very specific rule they had: we the audience never see, know, or experience anything that Steven doesn't. Even episodes about stuff like how Greg and Rose met, or how Connie, Peridot, and Lapis handled being a team together, are stories that are being told to Steven. I always thought that was a really interesting choice, and it actually gets lamp-shaded somewhat in the sequel series, SU: Future. Things happen outside of Steven's POV that matter, but because he isn't there, we don't get to see them either.
