Hm, I'd say this flashback is the heart and soul of this arc, everything else comes back to this, and it's really effective and well done. Gotta love how, 400 episodes later, we finally get context for Arlong Park, but also pull back the veil of mystery on more recent stuff that was just alluded to in Sabaody and Amazon Lily. It's all coming together, and that's something Oda excells at.

Emotion wise the average user just gets a general sense of surface level emotions like intent to kill etc. You'll increasingly see there are specialised users of Haki who can push various aspects of Haki to the extreme through training or talent. Coby's ability to feel the emotions around him in such great detail he can even hear their thoughts is one of these.
