Oh I forgot Dave Filoni directed a few episodes of this, on top of being a storyboard artist and character designer. His work as a director, writer, and producer is now legendary among Star Wars fans, especially for Clone Wars and The Mandalorian.
Fun fact: I think Dave Filoni later included an Avatar reference in Clone Wars. Clone Commander 1119 was named "Appo" and had an arrow painted on his helmet, resembling Appa and Aang's arrows. Appo first appeared as a character in Revenge of the Sith but in his appearance in Clone Wars, he and all clones were voiced by Dee Bradley Baker, a legendary voice actor who previously was the voices of Appa and Momo in Avatar! He does many animal noises apparently as well as voices in likely every childhood cartoon you know.

you are correct in it being George Takei voicing the warden, and it was Kevin Michael Richardson (known as the huge Captain Gantu from Lilo and Stitch) doing the voice of Tyro, Haru's father. That's the thing about Nickelodeon producing this in the States, even though it has that anime look to it, that they can get these big-time names to voice characters that would appear only a handful of times in the series.
