La Bête du Gévaudeau = The Beast of Gevaudan, the former name of an area in France. Killed many children and livestock, it was believed to be an especially big wolf, wild dog, or lion. Ofc some rumors also said it was a supernatural being. Jeanne was introduced as Ruthven's Bourreau (executioner), so I guess that's why he talks about (presumably) his former students to her, they've known each other since at least the war between vampires and humans.
