1. Quotes he reads are basically the factions own rulebook. Basically the book has all the lore of said faction and rules for their figurines how they play on the tabletop game. (Example you asked the quote on the Chaos faction that is from the Chaos Book that quote).
Well you didn't have that many questions in the end to really answer. Most of it is just things that you can only learn by just diving into more 40k. Btw if you want to go truly insane Lee you could sub to Warhammer+ to watch more cool animation of 40k. There are lot of shows there like what you saw from Secret Level 5 episode. But they are longer and more story in them.

Something really high level to understand about this universe that really makes it make sense is the concept of "grimdark". It basically means, "shit's fucked." Everyone is evil and no one is evil because their actions make sense. In a sense, humans kill to survive, chaos corrupts because it's chaos, orcs gonna orc. You asked who the chaos gods were fighting, but the truth is that they don't necessarily need a reason or rhyme to do so. They're chaos because they're chaos.
