Ingredients:
1/2 medium yellow onion, diced
1/2 cup diced celery
1 cup quinoa uncooked
1 large yam or sweet potato, diced
1/2 cup dried cranberries
2 tablespoons butter
2-3 teaspoons curry powder
Salt
2 pears, diced
1 pound ground pork, plain with no seasonings.
Directions:
Rinse quinoa with water. Drain and discard liquid. Place in a pot with 2 cups water or broth. Cover. Reach heat to a low boil for 20 minutes.
Cook ground pork in a cast iron skillet until cooked thoroughly.
Place butter (OR use the oil left over from cooking the pork) in a large pan and melt. Add onions, celery, and curry and cook until soft, about 5 minutes. Add yams, cook for about 15 min or until softened on medium heat covered.
Stir in cranberries, sauté uncovered for another 5 min.
Add pears and stir in gently and cook for another 5 minutes. Fold quinoa and pork in and turn off heat.
This also can be made without the pork as a meatless side dish.
