Curried Pear and Pork Quinoa

Ingredients:

1/2 medium yellow onion, diced

1/2 cup diced celery

1 cup quinoa uncooked

1 large yam or sweet potato, diced

1/2 cup dried cranberries

2 tablespoons butter

2-3 teaspoons curry powder

Salt

2 pears, diced

1 pound ground pork, plain with no seasonings.

Affordable Pesto

Ingredients:

1 cup raw sun flower seeds, unsalted

3 cups basil

2 cups spinach or chard

4 garlic cloves

2/3 cup avocado oil (olive oil works well too)

3/4 teaspoon sea salt

2 tablespoons of lemon juice

Directions: Place all the ingredients into a food processor and puree until smooth. Ready!

I usually freeze mine into little half pint jars.

It’s not too late for Pumpkin Pie! Pumpkin Pie is my absolute favorite. I like it cold and I like it hot. I like it for dinner and I like it for breakfast. Just because you eat healthy doesn’t mean that you have to skip out on the pie. Homemade Nourishing Ramen Soup

 

Here’s how I made our delicious Ramen soup

1 tbls Avocado oil
1/2 cup Chopped onion
