Sow The Land's Pumpkin Pie

It’s not too late for Pumpkin Pie! Pumpkin Pie is my absolute favorite. I like it cold and I like it hot. I like it for dinner and I like it for breakfast. Just because you eat healthy doesn’t mean that you have to skip out on the pie. We grew so many sugar pie pumpkins this year and we roasted, pureed them and put them into our freezer in 2 cup increments for making pies and all things pumpkin pie spice. Here’s our family’s favorite Pumpkin Pie recipe that we like making every year for Thanksgiving and Christmas and the days in between. It’s healthy, gluten free, GAPS diet approved and refined sugar free. Enjoy!

Sow The Land’s Pumpkin Pie

Makes 2 pies

Ingredients:

Crust

1 cup pecans, walnuts or even cashews but make sure they are raw and unsalted! 

About 1/4 teaspoon Cinnamon

Pinch of sea salt

1/4 cup unsweetened coconut flakes

1 cup of dried dates (I tried this with dried figs and I didn’t like the taste, I thought it was too sweet.)

5 tablespoons cold butter, cut up.

Filling

2 cups pureed pumpkin

2 eggs

1 can of coconut milk

1/2 cup honey (you can use maple syrup if not on GAPS diet)

1 tablespoon pumpkin pie spice

Pinch salt

Instructions:

Preheat oven 350 degrees. 

For the crust, place all the crust ingredients in the food processor except the butter. Pulse until it begins to look like it’s starting to stick together. Then add the butter in pieces and pulse just a few times to incorporate together. Then transfer to pie dishes. I only have one glass pie dish so I will use a cast iron skillet fo the second. Press the mixture down to form a bottom layer crust. This pie crust will not stick up above the filling or else it will burn. 

For the filling, pour all the filling ingredients in a blender and blend until smooth. Pour over the pie dishes to fill.

Bake for 1 hour. I like to bake these separately because I find that when I bake them together they don’t set up as nice. But you can bake them together just make sure they cook thoroughly and check with a butter knife for doneness.
