Homemade Nourishing Ramen Soup

 

Here’s how I made our delicious Ramen soup
Serves 3

Ingredients:
1 tbls Avocado oil
1/2 cup Chopped onion
1/2 tbls fire cider seasoning, if you don’t have any you can just use a curry powder seasoning. (See video recipe for fire cider seasoning: https://youtu.be/LONo5uRgUK4)
2 teaspoons of shredded ginger https://kit.com/sowtheland/eat/the-ginger-people-or
3 carrots, shredded or julienned
2 cloves garlic minced or finely chopped
2 shiitake mushrooms, sliced
1 quart bone broth (See video recipe https://youtu.be/antzaIHcksY), PLUS 1 quart of water
2 cakes of ramen noodles https://kit.com/sowtheland/eat/lotus-foods-organic
2 cups of baby greens mix (use one that includes bok Choi)
1 cup cooked, shredded chicken

Salt/Pepper
Lemon slices + juice from 1/3 lemon
Radish slices or cilantro for garnish

Directions:

Heat up the oil in the bottom of a stock pot. Once the oil is hot, add in the onions, seasoning, ginger, and carrots.

Once those ingredients have cooked until softened, add in the garlic and mushrooms and sautee for just a few more minutes. 

Next add in the liquids and use a wooden spoon to scrub the bits off the bottom of the pan. Once the liquid has heated to a soft boil, add the ramen cakes and cover for 5 minutes. Add salt and pepper to your taste.

Add in the shredded chicken and the greens. Once the everything has heated through serve into bowls and top with garnishes.
