Wanna chime in too about practical skills courses. I was in high school in Montreal, Canada, around 1992-1997 (yeah, I am the outlier in your demographics). I had almost the same as Taha's, i.e. one course where you would cook, sew and make a family budget ("économie familiale"), and one where you would do woodworking and basic electronics soldering ("initiation à la technologie").
