A few notes, another option for hypervisors would be XCP-ng, which does support 2 node HA out of the box from what I'm aware; it generally prefers a separate NFS share for VM's but there is continuous replication that you can run between nodes (haven't tried it but I know it's a thing.) I do like the idea of dual routing VMs on separate machines, but from what I'm aware CARP won't work properly on the WAN side if you only have the one DHCP lease, maybe it does work and it's just the updates that break for the VM that doesn't get a WAN address but I know generally you can't do HA without at least 3 WAN IPs. Also TrueNAS Scale is pretty good in a virtual environment with PCIe passthrough for HBAs/NICs. You can do ZFS on the hypervisor, but TN has the really nice UI and ability for automated scrubbing and email, not sure if you have an analogue in Proxmox, or if there's a manual way of setting up those kinds of automated email alerts for ZFS status.
