Ham and beans or chicken and dumplings. Two things Mom made of which, long after everyone else was finished with dinner and the table was otherwise cleared, I would still be sitting there having just one more scoop... and one more... and one more... and juuuust one more...

Layered chicken enchiladas. One of my favorite foods growing up and the only one where I don't have my mom's recipe.

Little Debbie oatmeal creme pies. Parents would buy me one from a food truck every weekend in the summer, after a long bike ride on a park bike trail. It may not sound like much, but desserts were rare for us. That oatmeal creme pie was like a treasure to me.

Fried potatoes. Sliced and fried in an iron skillet. My mother fixed them as part of supper, but for me now they are the main part of breakfast, with cocoa and toast. My mother most certainly did not use olive oil as I do, but probably lard or something like Wesson oil.
