I have more or less the same opinion when it comes to not spending the majority of your life waiting for render on high poly lol. If I had to add to that, I've heard from some beginners say that high poly is much easier for them because the goal is very clear. I've also heard from some beginners that high poly is harder because the goal is so clear, you always see how far away you are from it, and it can be very discouraging. Personally, I fall into the camp of feeling like mid-poly is the most comfortable sweet-spot between manageable and looking good. But, I can see the perspective from the other sides too - It really depends on the how the person views certain challenges -

My own two cents is that a bias towards Mid-Poly modeling will give the modeler the basics for understanding how to up or reduce polys depending on project need. High Poly, when designing or prototyping for the final rig, is just way too computing intensive. You can spend the better part of your life waiting for your computer to do renders. On the flip side, Low Poly renders super quick but it doesn't give you a lot to work with to explore imaginative expression. So the happy medium, for me at least, is to play in the Mid Poly sandbox and decide from its results which way the modeling needs to swing to meet final expectations.
