Fullmetal Alchemist: Brotherhood, Vinland Saga, One Punch Man, or even Demon Slayer if you're looking for something more action packed. One of my personal favourite shows where the music and soundtrack really adds to the enjoyment of it is Samurai Champloo which the late great producer Nujabes worked on the OST for, it's not something quite as heavy as AOT but I think it could be right up your alley!
