Hydroponics!

The idea is that you craft special seeds from a crop + the super corn. That gives you a seed which doesn't require light in the sense of it checking for the world's light level (so it works like a mushroom), but it does check for special "light" blocks (the construction lights in this image) and irrigation.
It also REQUIRES the use of farm plots, so they have a use now for the farmer. But this will allow players to do entirely underground farming if they so wish.
I haven't done the same for trees just because there can be issues with blocks "growing through" other blocks and causing chunk corruption.
