2022-07-31 01:56:04 +0000 UTCFYI, the thing Chicago is apparently named after is a type of leek (AKA a smelly onion) that is native to the area, though it’s somewhat rare nowadays. Chicago is where it is because it’s the only portage between a tributary of the Mississippi River and the Great Lakes, and after they built canals connecting everything, the route from the St. Lawrence River to the Mississippi goes through Chicago. (The railways followed the canals, and everything sort of went from there.) Because Chicago is a portage, it was indeed historically at least partially a swamp, though most of the swamps were drained or graded into lagoons and whatnot. (I grew up a stone’s throw from one of these scenic mosquito breeding grounds.) Anyway I remember hearing a while back that some fancy restaurant had found a way to source chikagou leeks, because of course they would.
