trying a different approach with video editing, I was using Blender's default video editor with "Perceptually Lossless" quality but it was still noticeably too compressed, now I'm using DaVinci Resolve to export it uncompressed and converting it to mp4 with HandBrake. The files will be a bit bigger but it should have much better video quality!
