What about a giant serpent or lizard mount. Some inspiration could be the Cobra for the snake design or a large monitor lizard. I also though a giant fish mount would be cool. Yes I know its a forest setting, but some forests around the world flood regularly so the possibility still stands

I love the idea of a dragon fly or maybe a unicorn.

can't be a yak as of the forest - so easy go to is a Stag or Great Bear ( armoured ) or Horse or Timberwolf . A bit more wild are giant Panther or Wolverine or a bit more out there a Big foot - shoulder mount . Finally a Centipede or Roc

i wanna do something nontraditional since a native american esc scheme is what you think of when a druid comes to mind so maybe something from the same region either change or made larger to add some contrast so its not so generic

A cross between a giant snake and a flying squirrel like the Tobi-Kadatchi in monster hunter. A flying mount doesn’t make sense in a densely wooded area, however the ability to scale trees and leap/glide between branches would be cool. You could even give the scales a more bark like appearance.

A large raccoon or tanuki that looks like it was crossed with a treant as a sort of forest spirit.

A giant humming bird or hummingbird griffin that is nimble and lean rather than a normal ferocious griffin. With long bird of paradise like feathers flowing behind it as it darts between the giant trees with little effort as through piercing through water
