My setup is an hybrid Bitwig+Synths+Pedals+Eurorack, so I am particularly interested to observe your journey. Sharing here one of my experience, not trying to sell anything :-) One big turning point was to go with RME. Regardless of which of their hardware product you pick, their TotalMix software is the hidden gem. My choice was a used HDSPe MADIFace expresscard+ADI648 for the "ADAT" backbone. It is essentially a matrix of 64 in/out that can be hardware mix/loopback any way you need, including in-between software on your PC. So now Bitwig has *simultaneous* access to various audio interfaces accumulated over the years (ADA8200, iPAD+TOSLINK through MOTU LP32, ExpertSleepers ES-3/ES-6 for CV I/O, a RME Babyface Pro for various I/O and DSP EQ...) plus access to windows audio and VCV Rack. Bought most of my RME stuff used (occasional *amazing* deals if patient). The price new is out of my league.
