In the most recent season of Top Chef, someone has issues with getting their chicken wings fully cooked, since the wind was preventing the temperature of the oil from getting hot enough. I thought, "I wonder if that makes sense to a beginner cook", and the video before you is the result of fiddling with that idea. I don't have any real notes to share about this one, since it's so short and simple, but I do want to mention one more time how important it is that I write a script and come back to it a month or two later. This script changed a lot over the Summer, and I think this is a relatable parallel: how many times did you reorganize your entire desk since covid started, thinking each time, "now THIS is finally perfect" only to reorganize the desktop or the cables or the positioning of your monitors? To call something done immediately after making it feels like its own lesson in momentum.
