In the most recent season of Top Chef, someone has issues with getting their chicken wings fully cooked, since the wind was preventing the temperature of the oil from getting hot enough. I thought, "I wonder if that makes sense to a beginner cook", and the video before you is the result of fiddling with that idea. I don't have any real notes to share about this one, since it's so short and simple, but I do want to mention one more time how important it is that I write a script and come back to it a month or two later. This script changed a lot over the Summer, and I think this is a relatable parallel: how many times did you reorganize your entire desk since covid started, thinking each time, "now THIS is finally perfect" only to reorganize the desktop or the cables or the positioning of your monitors? To call something done immediately after making it feels like its own lesson in momentum.

With the beat switch at the mention of Drake, I was hoping this was going to turn into a diss track. Even if I wasn't subscribed to you, this video title is the sort of thing I'd click on, because I didn't actually know what the topic would be. I at first assumed you'd be discussing momentum while cooking, like mise en place and prepping multiple dishes at once so everything hits the table at the same time. There were a couple moments in the long takes where it felt like you were finding your words that threw me off, but I'm not sure I'd even notice this if I wasn't watching critically.

LMAOO the announcement of the ad all the way at the end powerful very intuitive explanation of “thermal mass,” and recognition of the difference between conduction on the pan, and conduction/advection in the oven! I’ve had professors who would have to take an hour or two to communicate this much information with half the intuition and none of the engagement.
