The show runner said that Toranaga did not intend or want Hiromatsu to commit seppuku. He was pretty devastated by it.
His plan was for the generals to
oppose him. And for cultural reasons, their opposition and refusal to sign would necessitate their offering seppuku. Toranaga anticipated that and was planning to accept it. His letting his oldest generals commit seppuku was going to be very compelling evidence to Osaka that he was determined to surrender.
According to the show runners, things were all going to plan until Hiromatsu saw one of the generals start to draw his sword (to offer seppuku) and Hiromatsu decided to take their place.
Its clear from the people on the show that Hiromatsu didnt know of Toranaga’s plan… but (my guess) is that he knew that his death would be much more meaningful than that of the generals — i.e., If this wasnt an act, It would wake Toranaga up from his defeatism.. and if it was an act, it would be much more convincing to Osaka.

I don't really see Toranaga predicting his son's death like that, he was just as likely to kill his half-brother, luck got in the way. And I do wonder whether his half-brother dying would've been beneficial to him, in any case the show doesn't attempt to explain how things would've gone if Nagakado had been successful.
What is true is that Toranaga knows how foolish and reckless his son was, and that him trying something was inevitable, getting himself killed would be likely as well. So it could be something that wasn't necessarily obvious to Toranaga but more him playing the odds. I prefer that more than him being some kind of omniscient being that knows exactly what everyone is going to do before they do it, the show hasn't gone THAT far with it. In that same way he didn't somehow manifest an earthquake to kill his own men, but he sure used his circumstances to his advantage.
And no, I don't think John knows anything, at no point has he given us the impression that he knows how to play the same games the others play, his role is to be the outsider that is very straightforward. He'll try to manipulate like in this episode but he is always very transparent, "I knew that he knew that I knew that he knew" is not John Blackthorne. Right now I can only see Mariko or Ochiba as able to outsmart Toranaga. The show continuously shows us that women can only use their words to build and use their influence, and so are also better at sniffing out the deceptions of others, like how the courtesan mistress knew immediately that Toranaga wasn't actually giving up.
