You are mixing 2 different anime.
In HxH 2011 Mito tells Gon about Ging, Kite saves Gon from the bear and he hits him in the face, just that.
He doesn't know he saved Ging's son and Gon doesn't know Kite is a hunter so his behavior can't be driven by that.
Gon's discussion with Mito in 1st episode is explanatory enough in my opinion but that's not important anyway, people didn't suggest that episode to clarify Gon's behavior at the start of the series but to explain his behavior in this arc.
That's totally wrong because in this anime Kite is a stranger to Gon until Chimera Ant arc, he forgot about him and he didn't know who he was. When I say that HxH 1999 ep.1 doesn't add anything I'm not denying its own importance in that specific anime, in the context of 2011 Chimera ant arc it doesn't add anything (in my opinion even in the manga and therefore even in 1999 CA arc). Everything has already been explained or will be explained

Tantas preguntas que se ahorrarían si Madhouse hubiera hecho bien las cosas con Kite desde el comienzo, su omisión desde el comienzo de la serie es un error grave, Kite es mencionado por Gon por varios pasajes del manga, de hecho lo primero que hace Gon cuando lleva a Killua a Isla Ballena es llevarlo al bosque al lugar que conoció a Kite, Kite le cambio la vida a Gon cuando le contó que su padre estaba vivo y es un personaje fundamental para el desarrollo de Gon y de la historia. Este reencuentro en el manga es muy simple pero efectivo, Gon y Kite se reconocen inmediatamente, Madhouse pudo haberlo arreglado pero decidió mostrarnos un relleno innecesario de Kite y Gon que no aporta nada y hace quedar a Ging como alguien que planeo todo, pero lo que más molesta es que no se reconocieran de inmediato, eso es imperdonable.

I really like your analysis on Gon's behavior here.
I do have to contest your episode 1 opinion, though. Kite is the very first character we meet in Hunter x Hunter and is the entire impetus for Gon's journey. Gon would not even know his father was alive or what Hunters were without him.
In the years between meeting Kite and taking the exam, Gon only had Kite as an example of what a Hunter is like. In my opinion, this really drives the motivation for Gon's behavior at the start of the series in a way that's far more understandable than how this animation opens.
I have other reasonings that I can refer back to once we get further in episodes as well, if that's not convincing to you

I want to share my views on Gon's behavior and Kite.
Gon has a self-worth issue that comes from the abandonment of the father.
The only way he can solve it is with meeting him and understanding why he chose becoming an hunter over raising him.
That feeling of not being enough is what drives his behavior when he forces Netero to use his right arm, when he cries because Hisoka left him his tag with the number 44, when he refuses to give up to Hanzo and when he refuses to stick to the riskless-plan created by Killua to fight Genthru.
In the process Gon finds out that Ging is an extraordinary person respected by many people AND that he didn't give up being a parent, in fact he created a game just for his growth and he thanked Kite for hitting him in the face (and Gon looks happy when he hears it from Kite).
This explains why Gon doesn't want to DISAPPOINT his father and it explains his relationship with someone like Kite who's been raised by Ging like another son, who's been assigned the same mission of Gon (to catch him) and who is respected by his father enough to entrust his son to him like to an older brother, someone who has already thought a lesson to Gon in the past.
In my opinion it wasn't necessary to watch ep.1 of HxH 1999 because the meeting in the forest between Gon and Kite doesn't add anything.
