Cocytus wanting to be ridden goes back to first season when he was fantasizing "Uncle Cocytus" giving piggy back rides to Ains' heirs.

Often times, Shalltear will ask for clarification to understand something, which gives Ainz a chance to hear the explanation from Demiurge or Albedo. If she starts taking notes and understanding things, then Ainz may not be able to rely on that opening. And, on top of that, having a diary of Ainz's actions? Potentially having documented sources of Ainz making potentially contradictory decisions and ideas? It's a little scary...
