I am catching up on the videos I missed the last couple weeks because of a temporary side job. I had heard some positive things about this show and it is on my ever growing list of things to watch. I like the pilot episode, but I agree there is a lot of info to absorb. I will answer the question about jambalaya since no one else has yet. I think you are mixing it up with gumbo as it is the dish where the "soup" is poured over some rice. Jambalaya is mainly rice and I think people generally cook everything together. I am far from an expert about either because I have never attempted to cook them myself and don't live in the Deep South (Tennessee is a southern state, but not considered a Deep South state), but they share a most of their ingredients. I don't want to get into their ingredients because it will make this a crazy long post. Both developed in the state of Louisiana. I have heard that jambalaya and gumbo both have French, Spanish, and African influences while gumbo was additionally influenced by Native Americans and Creole.
