Raw Chocolate Cashew Cheesecake (Simple)

This cake is one of the easiest things to make.  Mostly because it requires such minimal ingredients.  Its really only made out of nuts and fruit, and is by far the best thing ive had all summer.  My family agrees with me on this one:)


Brownie Base

2 cups walnuts

1.5 cups dried figs

1 cup mejuell dates

1/2 cup raw cacao powder

1 tsp cinnamon

pinch of salt


Place all ingredients in a food processor and pulse until very well blended.  Press into a 6 inch by 6 inch pan.  (You can use a bigger pan, just simply double the recipe)

Cashew Cream Layer

Make Coconut milk by blending 2 cups of coconut flakes with 2 cups of water at high speed, then filter through a nut milk bag (you can also use canned coconut milk, which will make it a little thicker in consistency)

2 cups cashews

1 tsp apple cider vinegar

1/3 cup maple syrup

2 tsp vanilla extract

1 cup of your homemade coconut milk + more to blend


Place all ingredients into a high speed blender or food processor.  If it is too thick to blend, add a little bit of coconut milk at a time, until it becomes creamy and smooth.  Be careful not to add too much milk, just enough for it to be the consistency of a thick cream.

Pour on top of your base and top with your favorite fruit.  I used sliced strawberries, but i tried raspberries once and it was very tasty.


Put into the freezer overnight.

 In the morning take it out of the freezer and put it into the fridge.  Eat it that night and share it with your family and friends. I promise they will love you forever.
