Raw Fig Coconut Slice

Figs are beginning to come into season at my local co-op, which is what inspired this recipe. This is by far the best dessert i think i've ever made.  These bars are made of whole plant foods, is simple to make, and only requires a few ingredients.  And i promise, you will NOT be disappointed.  I think i ate the entire batch in 2 days.  Also this could be made as a cake, and would truly blow your friends & families mind


Ingredients:

Walnut Fig Base:

Vanilla Cashew Cream:

Fresh figs


In a food Processor add all your base ingredients and pulse until very well blended and sticks together.  Should take 30 seconds to 1 minute to blend.  Place the base ingredients in a 10.5cm x 20.5cm loaf tin (or whatever size you have) and set aside.  In your blender add all your cream ingredients.  start with adding 1/2 cup of water.  Begin to blend.  As you are blending add as much water as you need to blend into a very thick and creamy consistency.  You will need the plunger attachment to help it to blend completely.  Alternatively you can use a food processor here, but it might not be as creamy. Don't add too much water as it will be too liquidy. Just enough to allow it to blend into a smooth cream.  Pour the cream over your base.  Thinly slice ripe figs and place on top of the cream.  Place in the freezer overnight to set.  Once they have set overnight you can eat them straight from the freezer, but i think they taste better when you put them into the refrigerator for a couple hours to thaw out.  They will be creamy, thick, and sooo delicious!
