Percy is the kind to hunt, and perhaps eat, dragons. You would not be able to convince him to fly one, especially with a hostile sky god on his case lol

Hopefully, he can Sansa can get their hands on some ice dragons. Arya would like that too. There's also s theory that there may be be a clutch of fire dragon eggs in the hot springs below Winterfell. That would be cool as hell.
