The topknot was cut when a samurai became lordless, either by leaving them, or upon the lord's death. Zuko and Iroh severed their ties and loyalty to the Fire Lord by doing that. It will also help them blend in as Earth Kingdom refugees. As with almost ALL of your potential questions, lightning will be explained later. This show is exquisitely written, and doles out information at an excellent and appropriate pace. Have patience. :) The writers gotchoo. Azula's flames are blue, because blue is the hottest part of the flame. Her name, or the root "azul" means "blue" in many languages. It can be hard to tell in the show, but she does use both blue fire and lightning.
