We already know that an afterlife is canon in the show, so if she killed Snow and Charming, they would probably reunite in Heaven / Mount Olympus / Elysian Fields / whatever. By putting them under a sleeping curse, she not only ensures that they are separated but also that the person sleeping is stuck alone in the burning red room of the curse. Snowing-centric episodes are always great and that ending music where he wakes her up will never fail to make me cry. That scene with Belle stands up to Rumple is one of my favourites of the season.
