that was so much fun. Toshi is very reluctant to claim any 'ownership' or pride for the impact he had on the local cuisine. Such a charming man. And there is no need for him to feel apologetic about not becoming a US citizen. If he is lucky enough to retain strong ties to Japan, he shouldn't sacrifice his ability to go back someday.

2025-06-13 00:28:52 +0000 UTCI love your interviewing style, and the directions you took the conversation. I've watched a lot of long interviews, mostly with jazz musicians. My favorite interviewers are those who research their subject, show up with good questions, and go into listen mode. A "good" subject may carry on for 4-5 minutes, others will respond with short answers, making you work at it. It seems like Toshi was that kind of subject, and you managed to get great responses.
