Ace Combat Zero has a lot of Arthurian/medieval references which both of these song titles refer to. The Round Table of course refers to King Arthur's round table while merlons are the raised sections on top of medieval fortifications that people can hide behind. The Round Table in the game is the nickname of Area B7R, a strategic location that was the site of numerous battles in the Belkan War and where a few of the game's missions take place. This song plays while you are in a dogfight with one of the ace enemy squadrons over Area B7R. Throughout the game you earn the title of "Demon Lord of the Round Table". Ace Combat Zero was actually the first AC game that I got into. It features Ace Style, a morality meter that'll change which enemy squadrons you'll encounter so you have replay the game multiple times to see everything.
