You actually pretty much hit the nail on the head. This game was a massive milestone celebration for Kirby, bringing back characters (and music) from basically every game in the series up to that point. That Gameboy-esque melody you picked up on was just that: the iconic Kirby theme "Green Greens" from the very first game in the series on, you guessed it, the Gameboy.

Fun fact, this suite actually has a prelude, titled Prelude: Into the Distant Sea of Stars, which plays as you fly into the boss arena.
The composer is Hirokazu Ando! He's usually the one who composes the final boss themes (he also did Two Planets Approach the Roche Limit and Fatal Blooms in the Moonlight). When Kirby final bosses have multiple phases (which is just about always), Jun Ishikawa will usually do a hectic, very intense track, while Hirokazu Ando does a more orchestral track which focuses heavily on incorporating the game's main themes and leitmotifs! For this suite, the leitmotifs are the Song of Supplication (the villains' theme), and Green Greens (Kirby's theme). I don't think you've heard any of Ishikawa's boss themes so far, but Gourmet Race was written by him.

The chiptune, interestingly, is not on your requests list! It's "Green Greens", the first level theme of the first game, Kirby's Dream Land for Gameboy.
